You're asking for something like a continuous round-robin sampling
thingie, where it continuously samples, but throws away samples when
they become a specific number of seconds "old"? It has been requested
to the Shark team (I last heard that request on WWDC). Don't forget to
file feature requests - think of RadarWeb like way for us to "vote" for
new features.
You do know that you can use the Alt+Esc *global* shortcut to
start/stop sampling in Shark?
In other words, the shortcut functions also when you're working in the
application that you want to profile.

(e.g., the stop button), then wait 15 seconds (or some other user
defined amount of time) and then take a snapshot of the FIFO. The
reason for this is that I know that I can cause a hang, but I also know
that it takes a long time to get to where it will hang. It would be
better to setup a simple script-like behaviour that triggers Shark's
sampling at the right time.
