Any tutorials and links would be greatly appreicated

You probably don't want an Xcode tutorial if this is what you would like to learn. Xcode is a tool for putting together programs, not a language for writing them in or a framework of system functions that they use. You probably need to learn more about the latter two.

A tutorial on how to use Xcode, without knowledge of languages and frameworks, would be no more helpful than a tutorial on how to use a word processor, if your aim was to learn how to write poetry in French.

Check the Apple Getting Started page in Developer Central for a good overview:
http://developer.apple.com/gettingstarted/

I'd recommend starting with the O'Reilly books:

http://www.oreilly.com/catalog/learncarbon
http://www.oreilly.com/catalog/learncocoa2
http://www.oreilly.com/catalog/lunixpanther
http://www.oreilly.com/catalog/buildcocoa

O'Reilly's Mac Dev Center may have some tutorials that could help you (http://www.macdevcenter.com)

If you don't know much C, C++, or Objective-C, then langauges like RealBASIC or AppleScript:
