I am using Xcode 1.5 and encountered the problem with syntax coloring disappearing. The explanation is simple, but doesn't seem to be documented. It is caused by manual formatting. In my case, I am using Applescript Studio and added a return character to split a long command. If wrapping is enabled (under Xcode -> Preferences -> Text Editing), it can be hard to identify this problem. So disable wrapping and look for any commands that are split across two or more lines. Rejoin those lines, save, and syntax coloring should work again.
