Try
1) selecting your target application listed in the Groups & Files panel.
2) select Get Info (Command-I).
3) Under 'General' category, change your name.

This should populate the Info.plist that governs the environs of you project.

How do you change the name of your project? I've changed everything in the NIB file, and the program's file name, but for some reason when it launches it still shows the old name in the application menu! What gives?
