I looked at the settings for my target, and under the collection "GNU C/C++ Compiler", I don't see a way to set the compiler to be gcc 3.3.

How can I build my project with gcc 3.3 instead of gcc 4.0 under XCode 2.0?

Look in the "rules" tab in the target settings. You need to override the system rule for C/C++/ObjC files.
