You are correct about what I am trying to do. I am new to XCODE and
have not been able to locate the OTHER_OSAFLAGS flag. Is this feature
available in XCode 1.5., or is it under a different name in 1.5, or
does it need to be set in a project specification file?

Well, by "stripped" I presume you mean "compiled to run-only".
It's not documented, but you can set OTHER_OSAFLAGS to "-x"
