No, you're not. There's been at least one thread about this problem
on the list recently, and I've logged a bug about it in Radar.
If you modify any Info.plist settings via the Xcode inspector, I
think that it will be copied over next time you build. It doesn't
seem to pick up changes made directly to the Info.plist file though.
