But I've found that almost all my problems in switching between Development
and Deployment build styles are solved if I remember to Clean all targets
when I switch.

If this turns out to be the real problem, then it is just a consequence of the fact that the same build directory is used independent of build style (by default). If you look through the archives, I've posted previously on how to set up a project to use per-build style build directories.
