Configuring the xcode environment

I'm wondering how to configure xcode. I know it is possible to set up environment variables for xcode, but I don't know how to do this yet any hints would be useful.
In particular, I want to generate long dates, my real name as author and my real name as copyright holder in all generated source and header files.
