I'm missing something--I don't think I have any subprojects (I just see
lists of files, although some of them are in a sub directory), nor is
there any scripts in the "run scripts" phase. Where are shell script
build phases kept?

Well, it looks like your target is set up to build some subproject
using the pbxbuild tool, which hasn't existed since days of yore
(pre-Xcode). At least open this shell script build phase and replace
'pbxbuild' with 'xcodebuild', and perhaps you may need to do more,
depending on what exactly it's trying to do.
