Well, it is a well know fact that XC is way slower than CW, in both
general UI experience and compilation times. This has been the case
since Project Builder 1.0, so I don't expect it to change. :(
I don't know why you switched away from CW (and am not interested in a
religious IDE war), but a real world solution I use is to keep both CW
and XC versions of my projects. That way I can work mostly in CW, but
build with XC once in a while to make sure all is well there (intel
build, etc.). Each compiler gives different warnings, which is also
great. Of course, if you have many projects that is not feasible, but
with just a few I highly recommend it.

Does Xcode support external editors? I thought it did but can't find it
right now. If so, you could use maybe CW or TextWrangler or something
as the editor.

Xcode 2.1 is the best release to date. :) And I guess that's a half
optimistic, half pessimistic statement.

Our biggest project takes about 5 min to build in CW and 15 min in XC.
And this is over 4 years since Mac OS 10.0 shipped.
