As a data point, I'm working on a dual 2GHz G5. My work habits leave lots of windows open; greater than 60 to 70 files at a time (the Window menu scrolls way off the bottom of a 20" display). When I do a "Find In Project...", it takes between one and two minutes to search about 1400 files. The more windows that are open, the slower the Find. I recently discovered that if the Status Bar at the bottom of every window is Hidden, the global Find takes less than 10 seconds. This suggests there is a performance issue with displaying text in Xcode.

And yes, almost any command causes the dreaded beach ball of death. Clicking almost any button in the Tool Bar takes 2 to 3 seconds to show any kind of response or change in the icon that was clicked. I have to take my hand off the mouse after clicking on almost any UI element, so that I don't accidentally double click something, causing the action to be undone before I even see the UI results of the first click. The UI response is incredibly slow.
