I've looked through the prefs, but didn't see anything, I'm hoping I
missed something.


Yes, you have missed XCShowUndoPastSaveWarning

I read about it in the latest Xcode "expert preferences" notes:

/Developer/ADC Reference Library/releasenotes/DeveloperTools/Xcode/XcodeDefaults.html

and was quite happy to learn that I could turn that off!
