Defining "Environment" build settings

Greetings,

I've got a general question about build settings. Build settings can be set at all different "layers" in the build setting hierarchy, the bottommost layer being the "environment" layer.

I've searched diligently, but I haven't found a definitive answer as to where the "environment" build settings get defined, especially when running the Xcode application.

I assume that when running the xcodebuild tool, any conforming shell environment values become the default value for build settings.

But when running the Xcode GUI app, where are these global "environment" variables set? Is this something I could set using the ~/.MacOS/environment.plist file? Or do you set these by defining something in the com.apple.Xcode preferences? Do I hack the Xcode application? Is there a some special .xcconfig file that's read somewhere?

Enquiring minds need to know.
