I don't think that we have any official documentation for project templates
(yet?) but you can find a lot information on the web if you google
"TemplateInfo.plist".


I'm fairly familiar with how these work so if you get stuck feel free to
email me. ;-)


If you have the developer tools installed then there should be some
templates in </Library/Application Support/Apple/Developer Tools/ Project
Templates/...>.
