Have you tried "shark" (from the command-line)? It's installed with
CHUD 4.2.2. Type 'man shark' for help. You might also want to check
out the User Guide for info on "System Trace."

system, as I could capture all the output into a text file, and

Well, GDB can do that if you attach to a process, but there's also
/Developer/Applications/Performance Tools/Thread Viewer.
