I think you are looking for class or quick models.
You can create Quick Models for a selection in the project window by
using the Design -> Quick Model menu item.
Class Models can also be created by using "Class Model" file type
from the New File assistant .

A couple of months ago when I first used Xcode, I
thought I pulled up a visual diagramming feature much
like (cough) MS Visio. However, I have not been able
to find that feature since then.
Am I just imagining things, or does Xcode have such a
feature? If so, how do you get to it?
