symbols, stripping, and crash logs

In CodeWarrior, there were two kinds of symbols, traceback tables and xSYM files. If I wanted to be able to see function names in crash logs but not debug an app, I'd just turn on traceback tables but turn off xSYM. Whereas in XCode there seems to be only one kind of debugging symbols, but various stripping options, and I'm not clear on the correspondence. What combination of options will let me see function names in a crash log, but otherwise make the files as small as possible?
