Xcode will use all available cores in a system to compile individual files. My PowerMac G5 Quad compiles nearly twice as fast as my PowerMac Dual G5 (same hard drives in each) and if you look at the build results window (and top) you see it is compiling 4 files at once on the Quad G5 (2 at once on the Dual G5).

Also I am not sure what you are reading in the review but I see this...

"The Mac Pro [2.66GHz] completely demolishes the PowerMac [Dual] G5
[2.5GHz] in build time, cutting the time to build Adium almost in
half.  The performance improvement is tremendous and it echoes some of
the feelings we've had when using Intel based Macs; anything involving
I/O seems to be faster and smoother."

In other words it is in nearly twice as fast for a task that is disk
intensive (if they used a disk configuration that avoided IO limiting
your would see the Mac Pro more then double the compile speeds of the
Dual G5).
