When you wrote that you removed the plists and cache files, have you
removed your user files inside your project file bundle?  Go to the
project file in the finder, right click (cntrl-click) and select "Show
Package Contents" and delete everything EXCEPT the project.pbxproj file.

I think that is a common solution Apple gives to these kinds of
problems. However, for the issue of Xcode crashing on a brand new
project - that is something that sounds quite serious and you should
submit a radar bug.
