I'm at a good point to pause and convert my application from command line to bundled.  Since I'm running under a severe deadline, I wanted to ask if there is an "easy path" for doing this.  For instance, should I fool around trying to reset all the build settings correctly, or should I just abandon my current project, grab a new (bundled) template and start moving my source into it?

It depends on what you mean by "bundled."  It you mean turning it from a command-line Unix tool to a GUI app, it would be best to add a new target to your existing project, select all your sources (except perhaps main.c), and add them to the new target, either by drag-and-drop or by choosing Get Info and checking the checkbox in the Targets pane.
