Building more files than CPUs

When I build with Xcode on my main G5, I have 6 PPC CPUs available around the house. Xcode will use those, and it will build *8* files at a time. When I build on the Intel iMac, it will usually build 2 files at a time (no other Intel Macs around). However, the other day it was building *6* files at a time.

Why can it compile more files than I have CPUs? Does it allow fast machines (dual 2.somethingGHz G5) to do 2 files per CPU? Or is it actually feeding the 2nd file while the 1st file is finishing up on a fast CPU? Better yet, how can I get the iMac to do 6 at a time *all* the time instead of 2. When it did 6 files at a time, it actually beat the 8-files-at-a-time PPC farm by 5 minutes (18 vs. 23), although that G5 was connected via AirPort Extreme, so it was spending a lot more time xferring data.
