This is probably more suited for Cocoa-Dev (if you're looking for a Cocoa app of course). There are a couple of threads in the archives on the topic already, for example this one:

It's a couple of years old, so I'm not sure it's 100% accurate (especially my comments on things that I found weird), but it still works, and it should get you started. I don't show how to open a window there, but it's simple - just create the window and put it on screen...

It would of course be interesting to know why you want to do this? Very, very, rarely is there any point in attempting to avoid the convenience of NSApplicationMain() and nib files!
