Others have made good suggestions about settings within Xcode and scripting will work. For a more "Mac-like" approach, there are a number of freeware products that will batch convert files. I like LineBreak (GPL license) as it will only convert line breaks in files with extensions matching a list of user-set extensions so it won't go around breaking your non-text files.
