It's unclear to me why maintaining the current open source status of GTK on Mac OS X would prevent its usage for cross platform development. As GTK is C/C++ it should be a snap to incorporate the framework in any application developed. Do it by static linking or by adding the GTK library into the application's bundle.
Gtk works fine on mac. i use gtk and gtkada in my work to do our guis for mac and linux. my boss keeps making noises about doing windows, but so far hasnt come up with the cash for it, and i won't do it on my own time ;-)
So, feel free to prefer GTK over the many other GUI frameworks in Mac OS X and feel free to discuss showstoppers in this process, if there are any.
i prefer gtk for our work as our products because i have to support cross platform. i am not sure what having a mac native gtk would get us as it seems to work as well as carbon for what i need.
