You could try Eclipse with the CDT plugin (it only supports C and C++
however). If you want to try Eclipse I wrote a plugin that does
Objective-C syntax highlighting - no code completion though contact
me off list if you want to try it. There is also JEdit which does
ObjC highlighting, and TextMate (which is an editor not an IDE). I
think you'll have a hard time using Interface Builder with any of
them though. I've never tried any of them with IB because I find the
Xcode to be a nice environment (though, like everything, there is
room for improvement).
Using apple X11 and fink / darwin ports you could probably also
install Anjuta IDE or any of the other open source IDEs if you'd
prefer (they look awful but will probably work). I also think
trolltech has one too (http://www.trolltech.com/products/qt/mac.html)
but I am not sure it does Objective-C.
