By all means, try the suggestions that have been posted but I seriously doubt you'll find anything that's better than Xcode for writing Cocoa apps. If you want a really good IDE your most promising option is probably to persist with Xcode and file bug reports (with test cases) for any problems you find:

You can (and should) file feature requests using the same system. Apple does pay attention to them and Xcode is steadily improving with each release.
