How to change Build Settings like SRCROOT?

Maybe I wasn't paying attention when the Assistant created my project, but
anyhow SRCROOT is wrong.  According to documentation on

"Some of these locations can be specified in the Building pane of the Xcode
Preferences window, and some can be set per-use per-project in the General
tab of the project inspector for a particular project."

Well, there are many build settings, but I can only find a few of them in
these two locations.  I can see SRCROOT in that General Tab, but it is not
editable.  Is there any way to change SRCROOT, or do I have to re-create the
project from scratch?
