you have received very quick responses from several people. The NeHe Site has been mentioned twice. And other than hiring a consultant, you will have to consult google, developer.apple.com and the Examples folder for a bit of basic information.
It is beyond the scope of this list to explain to you "How Cocoa fits into all this", because it can do so in many different way. One of them is described in Chapter 29 of Aaron Hillegass's "Cocoa Programming for Mac OS X", an excellent primer on Cocoa you may consider looking into.
