try,
Right click on your .xcodeproj file -> go to show Package contents
Open file project.pbxproj in Textpad find oldIcon.icns and replace it with new.icns.
I think this should solve your problem. However I suppose this process is not required if oldIcon.icns was removed properly.

Hello all,
I have trouble changing the application icon of my Cocoa project. When I
erase the old .icns file,
insert the new .icns file in the project,
change the entries in Info.plist, make sure no file the project contains
the string
"oldIcon.icns", erase the build subdirectory, clean all targets, and
recompile, I always get the error
message :
pbxcp : oldIcon.icns : no such file or directory
so in what hidden part of the system has the name "oldIcon.icns" been kept ?
