I share your pain, but this is not a problem of OS X per se, but of the weird build systems some projects come with
In the end, I might just try to build this on a PPC, and lipo that output with the local build
Given that I have easy access to x86 and PPC machines, that is something I resort to most of the time -- often that seems to be a better use of my time than changing the build setup.
I am sure it is possible to build any project universal. Technically, that should not be an issue. But given the oddities some people but into their makefiles, it can be a bit of work
