Now you made me curious. In Cocoa, it's not so obvious, but you can. You have to start with an NSPopupButton, not an NSButton. In the Attributes panel of the inspector, first set the "Type" to "Pulldown", and then set "Style" to "Square". I don't see any way to center the text, though.
