There is a menu item called "Clear Logs" in Xcode's "Debug" menu.
It hasn't got a keyboard shortcut, but you can easily assign one using
-> "System Preferences"
-> "Keyboard & Mouse"
-> "Keyboard Shortcuts"
Or with Xcode's builtin key binding/shortcuts thingy.

Choose something that's not taken yet (I just tried <ctrl> + <cmd>
+ K which worked fine).
