I think this is a known bug, but file it at bugreport.apple.com.

Xcode seems bad at rebuilding the target's info.plist; the only way I know is to close the project and reopen it.

In fact, Xcode 2 seems bad at updating any non-code file in an (previously buildt) application bundle.
In order to get everything included up to date, I always use an clean build for an release.


Which, "of course", gives usually an modified project file, which might be an problem for everyone who includes the svn revision in the plist...
