You wouldn't need a hex editor if the files are well-formed or intact. If
the files are mangled or malformed, however, it's a little easier to
decipher in hex.
UTF-8 has rules about certain sequences, and arbitrary binary or mangled
data may violate those rules. Sometimes it's easier to ignore the rules
and look at the binary to get a sense of how something might be mangled.
