Many thanks for the tips, Michael and Joar.
I'm using Xcode 2.4.1.
I couldn't get Xcode to respond to the 'Rebuild Code Sense Index'
button before it crashed again.
Turning off the 'Enable for all projects' option in the Xcode Code
Sense Preferences didn't help.
I sent several of the crash reports to Apple, and was just about to
submit a bug report when I figured out it was a corrupted source file
containing proprietary code.
The crash log told me that there was a 'EXC_BAD_ACCESS' in
'PBXTextFileDocument'. At first, I assumed it was referring to the
"project.pbxproj" file. But then it occurred to me that it might be a
source file, so I moved the project completely out of context, where
it couldn't find any source files, and it didn't crash, which
clinched it. Then I added the files back in a manual binary search.

As Michael said, it might be indexing, in which case deleting the
project index might help. Clicking the "Rebuild Code Sense Index"
in the General tab of the Project Inspector would in that case
probably also be a good thing to do.
What version of Xcode are you using? Have you filed a bug report
with Apple?
