Instantiate a class in a nib in Interface Builder 3.0?

Hi,

I'm a newb to Xcode 3.0. I'm working with IB 3.0 and want to instantiate a new controller class so I can wire up some target/actions to it and... the "Classes" menu is gone. I can drop my controllers header file onto the nib in IB but I can't for the life of me figure out how to instantiate it. I checked out the 3.0 IB docs but they didn't say.

  Any help? I'm officially stuck.

Also, is this the right forum or is there a super secret Leopard dev. list I should be using?
