Turn off Rich Text in the Attributes (cmd-1) inspector (making sure you select the NSTextView and not the enclosing NSScrollView). The Value binding then appears.

I have a number of NSTextView objects with a value binding (created in the old IB) which I can access in the new IB. But if I add a new NSTextView, there is no value binding. Is there another way to bind to the stringValue (as opposed to the attributedStringValue)?
