Please file a Radar and enclose a Sampler or Shark trace of the app when it's slow, and if possible a source file that it's slow on. It would also be interesting to note whether Xcode 2.5 performs better on your system than 3.0 does; the 3.0 editor is generally faster, but 3.0 itself delegates far more processes to background tasks, which has far less impact on current dual- and quad-core machines than on a single-processor PowerPC.
Nevertheless, our internal benchmarks on older G4s didn't reveal the behavior you're describing, so some diagnostics in a Radar would be helpful.
