My project has about 1,000 files total, and Xcode 3 is consistently faster
at editing, compiling, and debugging--on both my MacBook and my Mac Pro.
Also the debugger is better at figuring out types and displaying values.

I have had some issues with breakpoints--once with a breakpoint being
skipped, but more often with the debugger breaking where there is no
breakpoint. IIRC the breakpoint being skipped went away after a clean build,
while the phantom breaks come and go without any pattern that I've figured
out.
