<key>CFBundleIdentifier</key>

But, I'm not quite sure how to test this at runtime; It remains a
variable name at design time. It builds and runs but then so it
also does if I add a junk character in the variable name.
Open your build product package in Finder and open Contents/
Info.plist with Property List Editor. Check for a correctly expanded
value for CFBundleIdentifier.
I didn't manage to mention, without mentioning it (shh!), that this
was for iPhone deployment. Ah well, iPhone deployment has its own
distribution/bundle verification, and it fails do deploy while setting
this variable in this way. Bummer.
