From what I understand, Xcode releases of the iPhone SDK will include the Mac OS SDK by necessity (it's needed for the simulator), so if you develop for both, use the iPhone SDK. That said, Apple is free to change that anytime, so unless an Apple employee promises that it's this way, it might be a good idea to at least look at what version numbers are released for OS X and iPhone.
