what's the difference between "go" and "run"?

Xcode has two different ways to launch your program - "Run" (which doesn't launch it under the debugger) and "Debug" (which does). "Go" just launches it the same way as you last did it (which is why the "Go" menu command usually is "Go (Run)" or "Go (Debug)"

and whats about "touch" and "untouch"?
:)

Touch marks a file as being modified (and thus needing to be compiled) - much nicer than opening the file, adding a space, deleting the space, and then saving it.

Untouch does the opposite - marks the file as not needed to be compiled (which is normally a bad thing to do since the build can get out of sync with the sources, but if all you did was edit the date in a comment in a header file included by everything it allows you to avoid a full rebuild)
