Selecting Xcode version for xcodebuild on Leopard

Simple question:

If I have both Xcode 3.0 and Xcode 2.5 installed on Leopard, how do I specify which installation to use when xcodebuild is invoked from a shell script?

My Google-foo is failing on this.
