I went the simple route of executing a shell script when doing my release build, but as you say I don't actually think this is appropriate and it is rightly discouraged. On the other hand I am a one man outfit, so there is little (read: no) chance of any unapproved release builds falling into the wrong hands; the risk is so low I'm prepared to take it.

PackageMaker 3.0 should have a UI for signing the individual components in addition to the whole package but I forgot to file a bug on it, I'll do that now. It's the logical place to perform the signing too, immediately prior to packaging the release.
