Question about Property List Editor

Newbie alert.

I've been working on a data intensive project for the iPhone/iPod Touch using Xcode (this is NOT a question pertaining to NDA'd material). Until now I've been using plist XML formatted files to hold the program's data. Today I planned to move to plist binary files to improve time and space efficiency.

I am trying to use the Property List Editor to convert plist files from XML to binary format. There is an option in the "save as" menu item to do this. However, whenever I try to save the plist in binary format, though it appears to work, the resulting file is still always in XML format. I assume I am doing something really dumb. Any ideas what it is?
