I have been wondering this for a while too. What was the terminal hack?
defaults write com.apple.Xcode PBXCustomTemplateMacroDefinitions -dict-add ORGANIZATIONNAME "Acme Inc."

It's really strange that this feature hasn't found its place in the Xcode Preferences already.

I would suggest the General Pref if no new Pref view should be added. :-)
