You can set Xcode's prefs to put build files (either the final output, and/or interim things like .o files) in a central location instead of your project's "build" subfolder. I've set it to put the interim files in /Library/Caches, so my project folders don't get so big. This has the handy side effect of stopping Time Machine from backing up those files.
