I followed joar's excellent advice and filed a bug report with Apple; here's the reply Apple sent me:
This is a follow up to Bug ID# 5900845. After further investigation it has been determined that this is a known issue, which is currently being investigated by engineering. This issue has been filed in our bug database under the original Bug ID# 5601023. The original bug number being used to track this duplicate issue can be found in the State column, in this format: Duplicate/OrigBug#.
If you have any additional questions related to this bug or wish to check on status of the original issue, please update this bug report or send an email to <email@hidden>, referencing your Bug ID# 5900845.
Sorry not to have a work-around; if anyone knows how to deal with the problem at least on a temporary basis, I'd appreciate hearing from them.

Include information on what version of Mac OS X and Xcode that you're using. Please also include information on how you configured the project find panel, including the panel you find by hitting the "Options..." button. You can attach screenshots to save on typing.
If you find any errors / warning / backtraces logged to the console (/Applications/Utilities/Console.app) at the time when you see this problem, please attach that too.
