I can tell you that GCC 4.2 supports OpenMP but I can't tell you
that GCC 4.2 is included in Xcode 3.1 beta which is included with
the iPhone SDK which is under NDA.
Actually, you can: http://www.opensource.apple.com/darwinsource/DevToolsMar2008/
(gcc_42-5553)
Wow, I didn't even notice that sources for the 3.1 beta was
released. Thanks for pointing this out.
Note that not all sources have been posted (e.g. those of ld64
aren't there; I enquired about this and was told that only the
sources of its final version will be released). Further, incremental
updates for the subsequent beta's have also been posted at
http://www.opensource.apple.com/darwinsource/iPhoneSDKBeta2/
http://www.opensource.apple.com/darwinsource/iPhoneSDKBeta3/
http://www.opensource.apple.com/darwinsource/iPhoneSDKBeta4/

Finally, GPL'd software is never included in NDA's, because that
would run counter to the GPL requirements (I admit I didn't know/
release this either until someone pointed that out to me; this fact
is also stipulated in the Apple's NDA's). I guess that when gcc gets
replaced by clang, we will lose this advantage though (since that
one, like the rest of LLVM, is not GPL exactly to avoid being
subject to such requirements).
I will not worry to much about it. I bet clang (and llvm) will remain
open, just like the WebKit is.
